Seven Hills Winery in the Clare Valley established by the Jesuit priests who migrated to Australia. The underground cellar was excavated by hand and the winery building was constructed from stone quarried on the property. Was originally used to store the sacramental wines produced for the Catholic church around Autralia. Today it houses the fortified wines It was a nice hot day, we currently are having an "indian summer" and the temperature had risen to around 34C, there are only a few steps to go down from the outside to this cellar but the drop in temperature was amazing.
