Took this shot of a mustard field while driving towards Delhi a couple of years ago. It was a rather cold Feb morning ,but the sun was bright. The yellow Mustard is one of the main condiment particularly in North India. The whole, ground, cracked, or bruised mustard seeds are mixed with water, vinegar, lemon juice, wine, or other liquids, salt, and often other flavorings and spices, to create a paste or sauce ranging in color from bright yellow to dark brown.
