As kid I used to go down to the local creek nearby my house and catch crayfish. Now keep in mind this far south our crayfish get really big and are great eating.(known as Louisianna lobsters)..now as a kid I would get my cane pole a lil fishing wire, weight and saltmeat for bait..What you do is you drop the line down in the hole for a minute or two to let the crayfish take a taste of the meat(man do they like salt meat) and once they start eating it they do not want to let it go! So you yank em out of the hole, put em in a bucket and move onto the next hole. Now as a kid I didn't get enough to do a boil. But there was enough to make some ettoufe of jambalaya(plenty meat in the claws in tails) did this one for the memories of fun I had and the pride bring it home...yall comeon back now yahear!
